Envy, an amber ale has arrived – it sounds cruel but is certain to hit the spot upon sunset, after a long hot summer day. In honor of the unofficial kick-off of summer and Memorial Day, 7 Sins Brewery offers a growler special at Sensory Winery & Art Gallery, Friday through Sunday – get a $6 discount on the 64-ounce growler for any beer style (including Envy, Greed, Wrath, Gluttony and Lust). Sensory Winery & Art Gallery is a proud sponsor of the Chautauqua-Lake Erie Art Trail this weekend.  When you come visit Sensory you can sip on one of our tantalizing cult wines and view the current show, A Natural World in Three Perspectives. John Ballard, Christine French and Carrie Tredo make up the talented trio displaying 3D driftwood assemblages, sculpture, artist enhanced prints, collage, mosaic beach glass panels and mixed media pieces.

Sensory  offers extended summer hours starting in June – doors will be open until 9 p.m. on Fridays and Saturdays. And most exciting, the outdoor space will be enhanced – a beer garden also opens in June! The garden space will have seating and a fire pit for all to enjoy. Select 7 Sins Brewery pint specials will be offered to celebrate the expansion from 5 – 9 Saturdays.

7 Sins Brewery Secrets to Brewing

In case you care, here’s how Bear, the beer demon, creates our bad-ass brews. To start, he has taken his original recipes and modified them to be brewed on a larger scale. Running grain through the grist mill kicks of the process. It is here that the mill cracks the grain.

The milled grain then goes into the mash tun for an hour or so where the grain and water mysteriously meld to make the sinful mash. What really happens is: first, warm water is added to extract sugar; next, water is pulled out from the bottom of the mash tun and put back on top to make a cleaner beer; last, fresh water is poured on top, filtering the grain bed and picking up the sugars headed toward the boil kettle. The liquid sugar becomes the wort (that’s wort, not wart!).

The next step is to run the wort into the boil kettle – don’t worry the kettle is only for beer-making and not warlock brew. Hops are added in this step of the process, all in all taking about 60 – 90 minutes. The wort is then sent to the Fermentor where yeast is added. The fermentation process is when the beer is crafted from the wort and the alcohol content is calibrated. A hydrometer is used to gauge how much how much soluble sugar is in the wort, the yeast is added accordingly and the beer is made. After fermentation the hydrometer is used again to calculate the potency.

By the way, it is the variety of grain and hops and type of yeast that determines what style of beer is concocted. The temperature at fermentation contributes to the definition and nuances of the beer styles as well. And for some of the 7 Sins brews, the addition of natural flavors infuses an extra kick.

From the Fermentor, the brews go to the brite tank for a couple of days where it is carbonated and then kegged using CO2. 7 Sins Beer is kegged in stainless steel and stays below 38 degrees for maximum sinfulness – I mean freshness!

Gluttony is an American Stout – and that means it is back alley black. Gluttony stays true to its name, overindulgent – thick, rich and full – formulated with 10 unique grains and 5 distinct hops. Gluttony punches like a roasted, smoky stout with a hint of rye making it a perfect brew to finish your day.

Greed – an insatiable desire to acquire more than one needs… our American brown ale will have you craving more. Greed keeps a low hop profile with a slightly sweet, roasted brown and a mild caramel flavor throughout. It has a hint of chocolate in the finish which shouts, gimme one more pint, now!

Lust is our devilish cherry wheat– as it should be, it is a traditional wheat, infused with a mild sweet cherry. This brew lavishes the lips and is perfect for the hot summer days we all lust for.

Wrath, to be overcome with anger – 7 Sins Wrath is an IPA, but don’t be fooled, it’s not your typical MMO fighter pale ale. True to an IPA, brewed with strong hops, a bit bitter and with significant alcohol content, Wrath was also created with a smooth malty backbone and a crisp orange hop flavor, placing it in a league of its own.
